Wagyu beef is known worldwide for its exceptional marbling, tenderness, and rich flavor. Originating in Japan, Wagyu cattle have long been prized for producing some of the most sought-after beef in the world, including the famous Kobe beef. While stories of cattle being massaged or fed beer have become legendary, the true distinction of Wagyu lies in its unmatched eating quality and the pride behind its careful breeding.

Today, Wagyu genetics are available to producers in the United States, creating new opportunities to bring premium beef traits into commercial and dairy-influenced herds. For Holstein and Jersey producers, crossbreeding with carefully selected Wagyu or Akaushi sires can help increase calf value through enhanced marbling, improved carcass quality, and a finished product that stands apart in the beef market. That opportunity is the foundation of GAA’s Wagyu/Akaushi program.

Our Wagyu Program

Through this program, GAA gives dairy producers access to premium beef genetics designed to add value to Holstein and Jersey herds through artificial insemination. Our available bulls are carefully selected by Burch Wallace of V-V Wagyu in Texas, with a focus on 100% fullblood, Wagyu Association-registered sires that deliver the marbling, carcass quality, and market appeal today’s beef-on-dairy programs demand. These genetics are chosen to complement dairy cows while producing calves with strong growth potential, excellent carcass traits, and the highly desirable eating quality associated with Wagyu beef. Several bulls in the GAA program trace back to the famous Shigejirou cow, one of the breed’s most influential females and dam of Popeye, Batman, and Mr. Ito. With both Akaushi-influenced red genetics and black Wagyu bloodlines available, GAA helps producers make strategic breeding decisions that can improve calf value and create a premium product for the beef market.
